Second Harvest

I was right in thinking that getting to know some of the Après ski folks at Second Harvest would be a good idea...the nicest people volunteer! Shouts of, “7... 9... 12... Pickup!” rang through the cavernous Second Harvest warehouse as 22 Après Ski Club volunteers sorted and bagged apples on November 6th. The Second Harvest is a nationally affiliated local private non-profit all volunteer organization that collects and distributes more than 26 million pounds of food each year to low-income children, adults and seniors. After two hours of high-speed apple sorting, the Après Ski Club members calculated they had handled at least 20 million pounds themselves, and retired to the break room for refreshments...apples, of course! Martha offered up her delicious recipe for microwave applesauce, and we left with the good feeling of having made a contribution to our community, along with relief that we had not been assigned to handle frozen foods.

Here's Martha's recipe: core, peel and 'chunk' enough apples to fill a medium bowl, cover tightly with plastic wrap, microwave for 2 minutes, cool and eat. If the apples are dry, add a little water, if you like your applesauce softer, add more time, if you like cinnamon and other spices, stir them in. A good Après’ ski recipe--quick, easy to modify for individual taste, and good for you!
